4 thick slices of cauliflower, cut from the centre of 2 heads of cauliflower
2-3 tablespoons extra virgin olive oil, plus extra for serving
1 teaspoon cinnamon powder
1 teaspoon allspice powder
200g block feta cheese, crumbled
¼ cup melted or runny honey, plus extra for serving (approximately)
¼ cup pistachio nuts, roughly chopped
Fresh thyme leaves
Heat oven to 200 degrees celcius.
Brush cauliflower steaks with olive oil on both sides. Mix cinnamon and allspice powders together and rub one side of each cauliflower steak with the blended spices. Heat a frying pan on high heat, sear each cauliflower steak in the pan until dark golden in colour. Remove from pan to a baking paper covered tray.
Pile crumbled feta cheese on top of each steak. Drizzle with honey and put into hot oven (top third of oven) for approximately 10 minutes. You want the honey to melt through the feta and the feta to soften but not melt. Cauliflower should be just tender but firm. If you prefer soft cauliflower, leave for a further 5 minutes. Remove from oven. Transfer cauliflower steaks to four individual serving plates. Sprinkle with chopped pistachios and drizzle with extra honey and extra olive oil. Sprinkle fresh thyme leaves over to serve.
