I have been reading a bit about massaged kale salads lately. I mean, who massages salad? When I think of a massage it is more my shoulders that are flexing up ready for a good pair of hands to come their way. But I decided to give the massaged salad a go. So here it is.
1 x head of cauliflower, cut into florets
1 teaspoon turmeric power
1 teaspoon cumin powder
2 x tablespoons extra virgin olive oil
Salt and freshly ground pepper to taste
1 bunch of kale of your choice (I used the darker, long leaf Tuscan kale)
1-2 teaspoons extra virgin olive oil (extra)
Mix the turmeric powder, cumin powder, extra virgin olive oil and salt and ground pepper in a bowl. Add the cauliflower florets and mix it all together. It is easier to get the cauliflower coated evenly by using your hands for this. Once coated spread the cauliflower on a baking sheet lined with baking paper. Bake in a hot oven (175 degrees celcius) until just cooked but still firm.
In the meantime, shred the kale. In a bowl add 1-2 teaspoons of olive oil to the shredded kale. You won’t need much oil and then give it a good massage with your hands. It is amazing our quickly the kale softens up. Mix the cooked cauliflower in with the kale and drizzle a little lemon juice over. There you have it, a massaged kale and cauliflower salad. Ideally served at room temperature.
