This sheet cookie is super easy to make. Throw all the ingredients into the food processor, spread it on the tray, top with chocolate chips, bake, and 15 minutes later you are eating this tasty, almond, chocolate chip loaded cookie. On top of that there is no flour and no butter – just a smidge of olive oil. That’s my kind of sweet treat! .
TIP – don’t forget to cut it up to share. Better still you might want to double the quantities for a super size.
1 cup almond meal
1 cup rolled oats
¼ cup pure maple syrup
1 tablespoon extra virgin olive oil
1 teaspoon baking powder
1 teaspoon vanilla bean extract or vanilla bean paste
Pinch of sea salt flakes
½ cup dark chocolate baking chips
Preheat oven to 170 degrees Celsius (fan-forced).
Place all ingredients except the chocolate baking chips into a food processor and blend until a dough forms. You made need to scrape down the sides of the bowl as you process to get it mixed in. Turn out on to a baking tray lined with baking paper. With wet hands gently shape the cookie dough into a thick square or round shape, 1 cm thick and approx. 20 cm square or round. The dough is quite tacky so it holds together really well.
Top the cookie dough with the chocolate baking chips and gently press them into the dough. Bake for 15 minutes. Cool on the tray for 10 minutes and then cut into wedges wiping the knife down between each cut.
