When I have lots of coriander on hand my go to is to make a chunky pesto and mix it through some thick soba noodles. The healthy ingredients of coriander, extra virgin olive oil and cashew nuts give you a good dose of goodness and anti-oxidants. There is no good reason to not eat a healthy homemade pesto like this one on a regular basis. It is also delicious as an addition to a cheeseboard.
1 x bunch fresh coriander
1 x clove of garlic, chopped
1/4 cup cashew nuts
2 x tablespoons parmesan cheese
Juice and zest of one lime
2 x tablespoons extra virgin olive oil
Blend all ingredients together until you reach a chunky texture (not smooth).
Mix pesto through boiled soba noodles (or noodles of your choice), adding a little extra olive oil if needed to blend together. Top with extra chopped cashew nuts and fresh coriander.
