1 ¼ cups of rolled oats
½ cup plain flour
½ cup firmly packed brown sugar
½ cup desiccated coconut
2 tablespoons golden syrup
¼ cup extra virgin olive oil
2 tablespoons water
1 teaspoon baking soda
Preheat oven to 180 degrees celcius. Line a large baking tray with baking paper. Place oats, flour, sugar and coconut in a large bowl. Stir to combine.
Pour golden syrup, olive oil and water into a small saucepan on medium heat. Cook, stirring for 5 minutes or until melted and combined and almost simmering. Add bicarb soda and stir quickly until mixture bubbles and rises in the saucepan. Remove from heat. Add mixture to dry ingredients and mix to combine.
Roll level tablespoons of batter into 20 balls and place on the baking tray. Use a fork to flatten slightly, leaving around 3cm between each biscuit to spread. Bake 10-12 minutes until biscuits are golden. Remove from oven and leave on the tray for 5 minutes to cool. Transfer to a wire rack to cool completely.
